A real hospitality interior and fit-out project from CBD Projects.
Café design succeeds when the customer experience and production workflow reinforce each other. The queue must be understandable, the menu visible, the bar efficient, seating comfortable and services maintainable. A photogenic concept cannot compensate for slow order production, poor acoustics or inadequate storage.
Turn the menu and brand into a technical brief
List every food and beverage item, preparation step, equipment item, storage condition and expected peak volume. Clarify dine-in, takeaway, delivery and collection percentages. These decisions determine the bar, kitchen, queue and back-of-house area.
Translate the brand into practical experience principles: fast and energetic, calm and residential, premium and ceremonial, or community focused. Use those principles to test every design choice.
Design the customer path and queue
Customers should understand where to view the menu, order, pay, wait, collect and clear trays. Keep delivery riders and takeaway collection from blocking dine-in guests where possible. Provide an accessible route and suitable counter interaction.
Test the queue at peak length on the plan. Protect entrances, seating and emergency movement from spillover.
Engineer the bar around staff movement
Map each drink or food sequence step by step. Place high-frequency ingredients and tools within efficient reach and separate clean and used flows. Provide landing space beside key equipment and plan restocking without crossing the customer path.
Confirm equipment models early because dimensions, heat rejection, water treatment, drainage, power and ventilation vary.
Coordinate kitchen, MEP and approvals
Extraction, make-up air, grease management, gas where applicable, drainage, hot water, refrigeration and fire interfaces must be coordinated with the building. Existing provisions should be surveyed, not assumed.
Confirm landlord and applicable authority requirements before design freeze. Changes to the menu or cooking method can materially change the technical solution and approval path.
Balance seating yield with comfort
Create a mix that suits visit types: quick solo coffee, pairs, groups and accessible seating. Excess density can reduce perceived quality and make service difficult. Check chair pull-back, server routes, bags and stroller movement.
Control reverberation using ceilings, walls, upholstery and layout. Power and Wi-Fi may support longer dwell time, but the business model should decide how much is appropriate.
Prepare for opening, not only construction handover
Commission equipment, water, drainage, ventilation, controls, lighting, audio, POS and refrigeration. Complete deep cleaning and pest-control procedures before stocking. Provide manuals and maintenance access.
Run service rehearsals using peak orders. Adjust smallwares, menu position, collection cues and staff routes before the public opening.
Frequently asked questions
What should come first in café design: the menu or the interior concept?
The menu and operating model should be defined first because they drive equipment, utilities, storage, workflow and approvals. The interior concept then shapes the customer experience.
Can a normal retail shop be converted into a café?
Sometimes, but feasibility depends on drainage, power, ventilation, extraction, fire strategy, waste, loading, landlord rules and approvals.
How many seats should a café have?
The right number balances revenue assumptions with queue space, service circulation, accessibility, comfort and the intended dwell time. It should be tested with the full layout.
Why is equipment selection urgent?
Actual equipment data is needed for coordinated MEP design, joinery, clearances and procurement. Generic allowances often lead to changes.
